Spice It Up With This Delicious Spiced Carrot Hummus

I love making my own dips & hummus. It is not only a healthy alternative to store bought versions which are too often full of preservatives, fillers or allergens, but also rewarding & easy to do. I say it is rewarding because recipes like the following one I will share with you are simple & require minimal effort but the flavor & freshness has the maximum effect. Just think how impressed your guests will be when the ask you “this is delicious, where did you get it?’ and you respond with “oh this, I made it daahling,”

I love this Spiced Carrot Hummus. As you probably guessed it is a Martha Stewart recipe, so you know it is has been properly vetted. Carrot may seem like an unusual choice, but the bright color adds a nice variety to the the sometimes drab mezzo. You can enjoy this coveted Carrot Hummus with pita or your favorite crackers. I love it on a coarse seed cracker, like Ryvita’s Sesame Rye crackers. The spiciness holds up against a substantial cracker. Fresh cucumber spears or bell pepper also are great options. A smear will liven up any sandwich or wrap. This hummus also can be thinned down for a sauce for lamb or steak, just add some coconut or almond milk to you reach the desired consistency.

1lbs Baby Carrots
1 tbsp tahini
2 tbsp olive oil
1 lemon, juiced
1/4 tsp cumin
1/4 cinnamon
1/8 cayenne
1/2 freshly grated ginger
1 garlic glove, smashed
Salt & Pepper to taste
Water 

  1. Steam the carrots until fork tender, about 12 minutes. 
  2. While the carrots steam combine, ginger, garlic, cumin, cinnamon & cayenne in a small bowl. 
  3. After the carrots are steamed through, allow to cool slightly before place in food processor. Then combine spice mixture with carrots. Add tahini, olive oil & lemon as well. Pulse until mixture begins to come together. Add salt & pepper to taste. You may need to add water & more oil to blend fully & velvety.
